The Backerei itself dates all the way back to the 1930s, over 90 years ago. Once known as Tillman’s, then Rose’s Bakery, and Dave’s Bakery, it became The Backerei & Coffee Shop in 1994. The building itself was built in the 1980’s by Tillman, and a lot of the same equipment is still in use (as well as original Tillman recipes).

Fast forward to July 1, 2019, when Craig and Amanda Hacker took ownership. They both grew up in New Ulm and graduated from New Ulm High School. Amanda worked in Human Resources at a local company and Craig worked at a local company as a machinist and most recently an Engineer Technician before deciding to join his wife in becoming a business owner. Together they have 4 kids, Brody, Riley, Alyvia, and Faith. It is definitely a family business because Brody, Riley, and Alyvia help out during busy times clerking, doing dishes, or running product!

Amanda was a home baker for many years with a focus on cookies and cupcakes. She learned a lot from her late grandma Georgianna Swantz, but that wasn’t her only training. Amanda and Craig both learned about yeast baking and techniques from Jerry Hauser (previous owner) and worked with him before taking ownership in July 2019. 

Amanda and Craig knew the product produced at the bakery was amazing and had been around for a long time. They wanted to keep those recipes in stock for loyal customers, but there are also lots of new products being added all the time! Now, there are roughly 20 employees, mostly part time, with 2 bakers and 3 helpers who work overnight to make sure fresh product is there in the morning! Wholesale distribution is a large part of the bakery and you can find the product as far away as Morgan, as well as in Sleepy Eye, Courtland, and Nicollet, as well as many local restaurants.
